The ingredients needed to make Paya/ trotters:
  1. Take 6-7 paya pieces / trotters
  2. Take 2 black cardamoms
  3. Make ready 3 green cardamoms (elachi)
  4. Make ready 3-4 cloves
  5. Prepare 1 inch cinnamon stick
  6. Make ready 8-10 black pepper corns
  7. Prepare 1 tsp cumin seeds
  8. Take 3 bay leaves
  9. Make ready 2 tbsp ginger garlic paste
  10. Get 4 onion paste
  11. Take 2 tsp red chilli powder
  12. Prepare 3 tsp coriander powder
  13. Take 1/2 tsp turmeric powder
  14. Take to taste Salt
  15. Prepare 3 tbsps oil
  16. Make ready 1 cup chopped coriander leaves
  17. Prepare 3-4 chopped green chillies

Steps to make Paya/ trotters:
  1. First in a pressure add paya pieces then add 4 cups water, salt and all the whole spices except cumin seeds, mix it and cook for 45 minutes or till it’s tender. Then keep aside.
  2. After that heat up a pan with oil add cumin seeds sauté it then add onion paste fry for 2 minutes then add ginger garlic paste fry for a minute.
  3. NOw add all the powdered masala and mix it well. Fry the masalas well.
  4. Now add the boiled paya pieces with all the water and mix it.
  5. Cook it on medium heat for 10 minutes till all the flavours are combined together.
  6. After that add coriander leaves and chopped green chilli and switch off the flame.
  7. Our delicious paya are ready. Garnish with coriander leaves and chopped green chilli.
