  1. Get 1 kg egg noodles
  2. Get 1 bunch choi sum (can be replaced with pok choy, bean sprout or even spinach)
  3. Prepare 10 pcs meatball (can be replaced with chicken balls, pork balls or fish ball)
  4. Get Chicken topping
  5. Make ready 500 minced chicken
  6. Make ready 1 can button mushroom (cut halves)
  7. Take 1 can quail eggs
  8. Take 2 pcs garlic (coarsely chopped)
  9. Prepare 2 tbs Oyster sauce
  10. Get 2 tbs sesame oil
  11. Make ready 1-2 tsb soy sauce (can be replaced with seasoning sauce like Maggy’s brand)
  12. Make ready 2-3 tsb sweet soy sauce
  13. Prepare 1 tsb oil to fry
  14. Get to taste Extra salt, sugar and white pepper
  15. Prepare Garlic Oil for seasoned the noodles
  16. Take 1/2 cup vegetable oil
  17. Take 10-15 pcs garlic (coarsely chopped)
  18. Get Meatball Soup
  19. Prepare 1/4 kg chicken bone (can be replaced with chicken feet as well)
  20. Make ready 1 liter water
  21. Prepare 1/2-1 tsp chicken powder
  22. Get 1 tsp white pepper
  23. Prepare 3-5 pcs stalks spring onion (chopped)

Steps to make Mie Ayam Special:
  1. First thing first, cook the topping. Heat up the oil and stir fry the garlic until half brown. Then add the chicken, mushroom and the seasoning (oyster sauce, sesame oil, soy sauce, sweet soyce, pepper etc). Last, add the quail eggs. You can add bit of water. Then just cook until the water runs dry. Set aside.
  2. Garlic oil. Heat up the oil and put the garlic, cook in low heat until it turns brownish. Set aside.
  3. Prepare other components. Boiled the veggies and noodles. Chopped the spring onion.
  4. Meatball soup. Make broth from chicken bone and water in low heat. Add the meatball on it. Set aside. Prepare a bowl, put chicken powder and white pepper as much as you like, then add the meatball soup on it. You can add spring onion for better taste.
  5. Chicken noodles. Prepare a bowl, put 1-2 tbs garlic oil, together with 1-2 tbs soy sauce, white pepper. You can add sweet soy too if you like. Then put the noodles. Mix it up. Add the chicken topping, veggies and spring onion. It best to eat with some chilli paste or sauce.
