The ingredients needed to make Easy Enchiladas:
  1. Make ready 1 1/2 lb ground meat
  2. Get 1/2 can tomato sauce
  3. Take 1/2 cup fresh chopped cilantro
  4. Take 1 fresh squeezed lime
  5. Get 1 pinch salt
  6. Get 1 pinch pepper
  7. Prepare 3/4 cup finely chopped onion
  8. Take 8 small floor tortillas
  9. Make ready 2 1/2 cup Mexican cheese

Instructions to make Easy Enchiladas:
  1. brown ground meat, 1/2 of chopped onion, 1/2 of cilantro, 1/2 lime juice, salt and pepper
  2. place meat in tortilla shell and sprinkle a little cheese, then wrap and spray light coat of non stick cooking spray, place in a 13in. X 9in. baking pan
  3. repeat step two until all tortilla shells are done
  4. pour half can of tomato sauce, sprinkle cilantro, and onion
  5. bake in oven for 20 minutes
  6. remove from oven and cover with desired amount of cheese
  7. bake for additional 5 minutes or until cheese its melted
  8. remove from oven let stand for 2 minutes and serve
