  1. Prepare 2 cups Flattened Rice (Poha)
  2. Make ready 1 large Charlotte Potato (small diced)
  3. Prepare 2 Shallots or 1 medium Onion (small diced)
  4. Prepare 1/4 green chilli (finely chopped)
  5. Prepare 1 thumb size piece of ginger (finely chopped)
  6. Make ready 1 tablespoon Cooking Oil
  7. Make ready 1/4 teaspoon black mustard seeds
  8. Make ready 2-3 Curry leaves (optional)
  9. Make ready 1/2 teaspoon turmeric powder
  10. Prepare 1/2 teaspoon sugar
  11. Prepare 1/4 teaspoon lemon juice
  12. Prepare to taste Salt
  13. Make ready Pomegranate seeds to garnish
  14. Take Finely chopped coriander leaves to garnish

Instructions to make Aloo Poha - Turmeric flavoured Flattened Rice with Potato:
  1. In a saucepan, heat the oil. Once the oil is to temperature, add the mustard seeds, curry leaves, finely chopped ginger and green chilli, diced Charlotte potato and onions. Stir to mix and add turmeric powder. Cover the saucepan and cook until the potatoes are cooked.
  2. In a colander, wash the flattened rice (poha) under running water until all the flattened rice is damp (but not soaking wet). Drain the water by gently shaking the colander.
  3. Once the potatoes are cooked, gently toss the flattened rice with cooked potatoes and onions.
  4. Season with salt, add sugar and lemon juice, gently mix and cook for 5 minutes on low heat. [avoid over mixing as this breaks the flattened rice]
  5. Take off the heat, transfer in a bowl, garnish with pomegranate seeds and chopped coriander. Serve warm.
