The ingredients needed to make Pakoda Platter:
  1. Get 1 bowl Besan
  2. Make ready 1/4 bowl rice flour
  3. Make ready 1 tsp Red Chilli Powder
  4. Get 1 tsp Turmeric Powder
  5. Take 1/4 tsp Baking Powder
  6. Prepare As per taste Salt
  7. Make ready As required Oil for deep frying
  8. Take As required Water
  9. Take 1 medium sized brinjal
  10. Make ready 1 Big potato
  11. Get 1 Big onion
  12. Take 3 Big green chillies (light green - non spicy)
  13. Get As required Dry roasted flattened puffed rice (poha) grinded to a powder
  14. Take As per taste Homemade Tamarind & Mint chutney

Instructions to make Pakoda Platter:
  1. Cut the vegetables- Slit the big green chilli vertically and remove the seeds from within. Cut the onions in ring (circular) shape. Potato & Brinjal can be cut in desired shape. Apply little salt and keep aside.
  2. In a mixing bowl add besan,rice flour,red chilli powder, turmeric, baking powder& salt. Add water gradually making a thick paste.
  3. Heat the oil in a kadai till boiling point,now take one tbsp of hot oil and add it to the besan mixture. (This helps in making the pakoda crispy)
  4. For crispy onion rings dip the onion cut in grinded poha mixture then fry
  5. Dip the vegetables one by one in the besan mixture and deep fry on medium flame
  6. Serve hot & crispy with homemade tamarind chutney or pudina chutney.
