The ingredients needed to make Vegetable Poha:
  1. Get 1 cup beaten or flattened rice
  2. Get 1 tsp mustard seeds
  3. Get 8-10 curry leaves
  4. Take 1 large finely chopped onion
  5. Prepare 1/2 cup chopped vegetables (beans,carrot,potato and green peas)
  6. Take 1/4 tsp turmeric powder
  7. Prepare 1-2 tbsp roasted pea nuts
  8. Make ready 1-2 finely chopped green chilli
  9. Make ready 1 tbsp oil
  10. Prepare as required Salt
  11. Take 1 tsp lemon juice
  12. Make ready 1 tsp sugar
  13. Make ready 1 tbsp chopped coriander leaves

Serve with chopped onion, sev , coriander leaves and lemon juice for extra tasty snack or breakfast. A great combination of vegetables and paneer along with Poha and some easily available spices goes well for lunchbox too. You can also tweak this recipe a bit and make this likable for your family. Steps to make Vegetable Poha:
  1. Heat oil in a pan.Crackle some mustard seeds.
  2. Add chopped onions and saute till it becomes transluscent.Add chopped green chilli and curry leaves. Saute for few seconds.
  3. Add all the chopped vegetables, turmeric powder,salt and saute for 5-10 minutes.
  4. Add roasted peanuts and stir it for few seconds.
  5. Rinse the poha in clean water till they become soften.Add the soften post to the vegetables and gently mix it.Cook for 2-3 mins in a low to medium flame.
  6. Add some sugar and stir it for 1/2 minute.
  7. Swith off the gas.Add some lemon juice and coriander leaves.Give it a gentle stir and serve hot with tea.
