The ingredients needed to make Indori Poha:
  1. Get 2 cups thick poha/flattened rice
  2. Take 2 tsp sugar
  3. Take 1/4 tsp haldi powder
  4. Take 1-2 tbsp lemon juice
  5. Get 1 tbsp oil
  6. Take 1/2 tsp mustard seeds/rai
  7. Take 1/2 tsp fennel seeds/saunf
  8. Take 1/2 tsp crushed coriander seeds(optional)
  9. Make ready 2 pinch heeng
  10. Make ready 1/4 cup peanuts
  11. Prepare 2-3 green chillies finely chopped(according to taste)
  12. Take to taste Salt
  13. Take 1 tbsp onion finely chopped
  14. Get as needed Chopped coriander leaves for garnishing
  15. Take 2 tbsp sev
  16. Take 1/2-1 tsp jeerawan

Steps to make Indori Poha:
  1. Wash poha in a colander under fresh running water, drain the water and keep it aside for 10-15 minutes.
  2. After 15 minutes, use fork or fingers to open up the poha.
  3. Add salt, sugar, haldi powder and lemon juice to the soaked poha, give it a gentle mix and keep aside.
  4. Meanwhile heat oil in a kadhai on low flame. Add mustard seeds, saunf, crushed coriander seeds (optional) and heeng. Saute for few seconds.
  5. Now add peanuts, saute for 1 minute. Add in the finely chopped green chillies, saute for another one minute.
  6. Add in the soaked poha, mix it gently with light hands.
  7. Now for giving it a nice indori poha texture, put this kadhai over a pot of boiling water. Cover it with a lid and let it cook for 6-8 minutes.
  8. Take poha in a serving plate..garnish with chopped onion, chopped coriander leaves, sev and jeeravan. Delicious indori poha is ready to serve😊
