The ingredients needed to make Ragda patties:
  1. Take 1 cup white peas /safed vatana / dried white peas soaked overnight
  2. Prepare 3 cup water
  3. Get 1/2 tsp turmeric powder / haldi
  4. Prepare 1/2 tsp kashmiri red chilli powder / lal mirch powder
  5. Make ready to taste salt
  6. Prepare for pattice / patties:
  7. Prepare 4 medium sized potato boiled and peeled
  8. Prepare 4 tbsp or 1/4 cup thick poha / flattened rice / beaten rice washed
  9. Get 1/2 tsp turmeric powder / haldi
  10. Make ready 3/4 tsp kashmiri red chilli powder / lal mirch powder
  11. Get to taste salt
  12. Prepare 1/4 tsp cumin powder / jeera powder
  13. Take 1/2 tsp chaat masala
  14. Make ready as needed oil for roasting pattice
  15. Get 3 tsp green chutney
  16. Get 3 tsp tamarind chutney / imli-chutney
  17. Make ready to taste salt
  18. Take 1 generous pinch kashmiri red chilli powder / lal mirch powder
  19. Get 1/4 onion finely chopped
  20. Prepare 1/4 to mato finely chopped
  21. Make ready 1 cup sev or as required
  22. Make ready as needed coriander leaves finely chopped
  23. Take as needed fried peanuts

Steps to make Ragda patties:
  1. Firstly, pressure cook soaked white peas along with water turmeric, chilli powder and salt for 4 whistles.
  2. Once the pressure releases, mash the peas. keep aside.
  3. Mash boiled potatoes
  4. Additionally, add thick poha, turmeric, chilli powder, cumin powder, chaat masala and salt.
  5. Combine well and prepare pattice.
  6. Shallow fry to golden brown and crisp.
  7. In a plate pour prepared ragada and place pattice.
  8. Further pour more ragada and top with green chutney and tamarind chutney.
  9. Sprinkle chilli powder, cumin powder, chaat masala and salt.
  10. Also top with onions, tomato, sev and coriander leaves.
  11. Finally, serve ragda patties hot along with cutting chai.
