The ingredients needed to make Pink Quinoa salad:
  1. Take 1 onion thin sliced
  2. Take 1 beetroot thin sliced
  3. Get 1 cucumber thin sliced
  4. Make ready 1 carrot thin sliced
  5. Get 1 white radish sliced
  6. Make ready 1 green capsicum sliced
  7. Make ready 2 bunch Coriander leaves
  8. Make ready 1/4 tsp oregano
  9. Take 1 Juice of lemon
  10. Prepare 1.5 tbsp peanut butter
  11. Get 1 cup boiled quinoa
  12. Take 1tbsp hot water
  13. Take 1/4 tsp salt+ 1/4 tsp Black pepper + 1/2 tsp brown sugar
  14. Prepare 7-10 cashew nuts (halves)
  15. Take 3 green chillies chopped
  16. Take as per taste Salt to taste(1/4 tsp)
  17. Prepare 1/4 tsp Black Pepper crushed

Instructions to make Pink Quinoa salad:
  1. First of all start with boiling Quinoa in water for about 15 mins till you see the small tails of the seeds as shown. Strain and wash with normal water and keep aside.
  2. In a mixing bowl add all the sliced veggies in order of onion, radish, capsicum.
  3. Carrot, cucumber, beetroot.
  4. Now, mix all of it gently. Keep this in fridge.
  5. Now make a dressing, take some lemon juice to it add peanut butter, some salt,pepper,sugar, oregano and hot water, give it a good mix.
  6. It will look like this. Now, add the green chillies and quinoa to the mixing bowl and mix gently.
  7. Sprinkle some salt if needed. Now drizzle the dressing and cashews and mix.
  8. Finally add, Coriander leaves. And serve. Enjoy healthy food without compromising on taste! ☺️
