  6. Get 5-6 green chilles finely chopped
  7. Get salt

Koki:

  1. In a thali, mix all the above ingredients and make stiff dough.
  2. Make equal portions of the dough.
  3. Roll out each portion into thick Paratha.
  4. With a knife make a design of diagonal lines crisscrossing each other from one end to the other side of the paratha.
  5. This is to ensure that Koki gets cooked well from inside.
  6. Heat the tava and cook koki on slow flame, flipping from one side to the other till golden brown and crisp.
  7. Serve hot with papad, curds,pickle or chai.
  8. Tip….If you want to make have more yummy version - of koki use ghee/oil add 3-4 tbsp of any one or both in equal portions and knead the dough.
  9. While flipping on tawa also use ghee/ oil to enhance the taste.
