The ingredients needed to make Puertorican WHITE Rice and Beans:
  1. Prepare 2 cup white rice
  2. Make ready 2 can 15 oz pink or red beans with sauce
  3. Make ready 4 tbsp sofrito (easier to find the Goya brand in freezer aisle)
  4. Prepare 1/4 cup diced onions
  5. Prepare 1 envelope sazon (Spanish seasoning)
  6. Take 1 1/2 tbsp adobo (Spanish season salt)
  7. Make ready 1 tsp salt
  8. Take 1 tsp black pepper
  9. Take 1 large potato, quartered
  10. Get 1 can 4 oz tomato sauce
  11. Prepare 5 each spanish green olives with pimento
  12. Prepare 1/2 cup chicken broth or water

Im puertorican and we never make rice with pigeon peas and beans, it just doesn't go together. We make white rice and beans, or any. (in Puerto Rico, it is traditional to serve rice and beans with almost every meal, but mainly with pork chops (cooked with a little sofrito and adobo seasoning) on the side). Instructions to make Puertorican WHITE Rice and Beans:
  1. Boil rice as directed on package with salt (usually every cup of rice is 2 cups of water). Set aside.
  2. In a medium pan, heat sofrito & onion until onion almost translucent.
  3. Combine rest of ingredients, EXCEPT RICE, & bring to a boil. Then simmer until potatoes are fork tender. About 30 minutes. If needed add a little chicken broth or water to keep saucy.
