  3. Get 75 gms carrot (Desi carrot preferred)
  4. Take 1 cup Homemade Pumpkin puree
  5. Prepare 6-7 Garlic cloves
  6. Prepare 1 veg stock cube (optional)
  7. Make ready 2 litres +1/4 cup Water
  8. Make ready 1/4 cup milk / cream

Steps to make Potato soup 🍲:
  1. Peel and roughly chop all veggies, put in a kadai / pot and add about a 2 litres water along with veg stock cube and boil for 40 minutes or so till the carrot and potatoes gets cooked.
  2. Blend it into a smooth mixture. Pour it in a pot, mix in the pumpkin puree too. I added 1/4 cup water as I felt it's too thick. Again put on the flame and set the pot of soup….add milk and stir and let it simmer for about 5 minutes. - (see recipe)
  3. Meanwhile while the veggies are boiling.Chop the garlic, onion, green chillies. Heat oil & butter (the oil is to prevent the butter from burning) add in the garlic first and then onion & chilli and saute it, when it browns add it to the soup and mix and let the soup simmer for 3-5 minutes but be careful don't over thicken it, if it does add Little hot water may be 1/4 cup as needed. Your soup is ready, serve hot. Garnish it with roasted flaxseeds, green onions, chillies, coriander and butter.
